The Comarca Minera Geopark is a territory where its inhabitants carry on with diverse traditions, but the most prominent is undoubtedly its food, which is present in daily life and carried with them by those who have had to emigrate. For this reason, one of the lines of work we have in the geopark’s management unit is the safeguarding of gastronomic heritage. Therefore, in collaboration with the publishing house Sit Lux, we are pleased to present this book written by Raúl Guerrero Bustamante, a native of Pachuca, chronicler, and researcher of cultural heritage. In this work, he presents a historical and contemporary chronicle of this snack, which is also a dish in itself, since we cannot eat just a chalupa; we complement it with its sandwich version, the pambazo, as well as chicken feet, wings, gizzards, and other offal. Conference: Comarca Minera Hidalgo Geopark – Historiography of its pre-Hispanic past
