The Comarca Minera UNESCO Global Geopark is a territory where its inhabitants carry diverse traditions; however, the most prominent is undoubtedly its food—a heritage present in daily life and carried in the hearts of those who have had to emigrate.
For this reason, one of our core pillars at the Geopark Management Unit is the safeguarding of gastronomic heritage. In collaboration with the Sit Lux publishing house, we are pleased to present this book by Raúl Guerrero Bustamante, a Pachuca native, chronicler, and cultural heritage researcher. In this work, he provides a past and present chronicle of this antojito—which is also a full dish in its own right, as one can never eat just one chalupa. It is often complemented by its “between-bread” version, the pambazos, as well as chicken feet, wings, gizzards, and other giblets.
It is also essential to pay tribute to all the traditional cooks who treasure the recipes of this snack in their own unique way. Many of them have built their primary or supplemental livelihoods by selling this dish. In 2024, the Honorable Municipal Assembly of Pachuca officially declared the Pachuca Chalupa as a representative dish of the city.
